Pork Sliders with Mushroom and Smoked Gouda Mayo
Ingredients:

- 5 lbs ground pork
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup sliced mushrooms
- 1/2 cup mayonnaise
- 1/2 cup shredded smoked Gouda cheese
- Slider buns
- Lettuce and tomato slices for garnish
Instructions:
Preheat your grill or stovetop griddle over medium-high heat
Divide the ground pork into small portions and shape them into slider-sized patties
Season with salt and pepper
Grill the pork sliders for about 3-4 minutes per side or until fully cooked and have a nice char
While the sliders are cooking, heat olive oil in a skillet over medium heat
Add sliced mushrooms and saut until tender
In a small bowl, mix together mayonnaise and shredded smoked Gouda cheese until well combined
Spread the smoked Gouda mayo mixture on the slider buns
Assemble the sliders by placing the grilled pork patties on the buns, top with sauted mushrooms, and garnish with lettuce and tomato slices
