Cilantro Pesto Shrimp
Cilantro Pesto Shrimp is a delicious seafood dish that combines grilled shrimp with the bright flavors of cilantro pesto. Pesto marinade adds fragrant herbs and nutty undertones to the shrimp, making a tantalizing flavor that is sure to impress.
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 cup fresh cilantro leaves, packed
- 1/4 cup toasted pine nuts
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
Instructions:
Put garlic, pine nuts, cilantro, and Parmesan cheese in a food processor and blend them together
Pulse until the food is very small
Adding the olive oil slowly while the processor is running will make a smooth paste
Add pepper and salt to taste
Put the shrimp in half of the cilantro pesto and let it sit for at least 30 minutes
Set the grill or grill pan over medium-high heat to heat it up
Skewer shrimp that has been marinated
Shrimp should be grilled for two to three minutes on each side, or until they are pink and opaque
Give it to them hot and put the rest of the cilantro pesto on the side for them to dip
