Corn and Crab Chowder

Ingredients:

  • 1 cup corn kernels
  • 1/2 pound crab meat
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 teaspoon thyme
  • 1/2 teaspoon paprika
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

In a large pot, melt butter over medium heat

Add chopped onions and garlic, saut until softened

Stir in corn, crab meat, potatoes, carrots, and celery

Add chicken broth, thyme, paprika, salt, and pepper

Bring to a simmer

Reduce heat and let it simmer until vegetables are tender

Stir in heavy cream and continue to simmer for an additional 5 minutes

Adjust seasoning to taste
