Creamy Black Bean Salsa Chicken
This slow cooker creamy black bean salsa chicken is a flavorful and easy meal to make. It's packed with protein and flavor from the salsa, black beans, and taco seasoning, and the addition of sour cream and cheese makes it extra creamy and delicious.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup salsa
- 1 can black beans, drained and rinsed
- 1 cup corn kernels frozen or canned
- 1 packet taco seasoning
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions:
Place chicken breasts in the bottom of the slow cooker
Add salsa, black beans, corn, and taco seasoning on top of the chicken
Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and tender
About 30 minutes before serving, stir in sour cream and shredded cheddar cheese
Cook for an additional 30 minutes, until cheese is melted and sauce is creamy
Season with salt and pepper to taste
Serve hot over rice or with tortilla chips
