Air Fryer Fried Squash



Using an air fryer, you can get the crispy, tasty goodness of fried squash without all the extra oil. These squash rounds that have been air-fried are perfectly seasoned and would be great as an appetizer or side dish.

Ingredients:

  • 2 medium-sized yellow squash, sliced into 1/4-inch rounds
  • 1 cup breadcrumbs preferably panko
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 large eggs, beaten

Instructions:

Preheat your air fryer to 375F 190C for 5 minutes

In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper

Mix well

Dip each squash round into the beaten eggs, allowing any excess to drip off

Coat the egg-dipped squash rounds with the breadcrumb mixture, pressing the breadcrumbs onto the squash to adhere

Place the coated squash rounds in a single layer in the preheated air fryer basket

You may need to work in batches depending on the size of your air fryer

Air fry the squash at 375F 190C for 8-10 minutes or until they are golden brown and crispy, flipping them halfway through the cooking time for even crispiness

Remove the air-fried squash rounds and let them cool slightly before serving

Serve your air fryer fried squash hot as a delicious and healthy snack or side dish
