Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup tapioca flour
  • 2 tablespoons coconut sugar
  • 1/4 teaspoon salt
  • 6 tablespoons cold butter, cubed
  • 2 tablespoons ice water
  • 3 medium apples, thinly sliced
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 egg, beaten for egg wash

Instructions:

Before you start cooking, heat the oven to 375F 190C

Pulse almond flour, tapioca flour, coconut sugar, and salt together in a food processor until everything is well mixed

Add the cold butter and pulse the food until it looks like big crumbs

Add ice water while pulsing the food processor until the dough comes together

Put the dough on a piece of parchment paper and roll it out into a disk

Put in the fridge while you prepare the apples

Apple slices should be mixed with honey or maple syrup, ground cinnamon, and lemon juice in a bowl

Take the dough out of the fridge and make a rough circle with it between two pieces of parchment paper

Put apple slices in the middle of the dough, leaving about 2 inches of dough around the edges

Fold the dough's edges over the apples, making pleats if you need to

Use the egg wash to cover the edges of the dough

Put it in the oven for 30 to 35 minutes, or until the apples are soft and the crust is golden brown

If you want, you can serve it warm with a scoop of vanilla ice cream
