Shrimp Fajita Bowls
Shrimp Fajita Bowls are a tasty mix of Tex-Mex flavors. Aromatic spices are used to season tender shrimp, which is then served on a bed of fluffy rice with bell peppers, onions, avocado, and hearty black beans. This dish is not only quick and easy to make, but it also tastes great and is full of fresh ingredients. It's perfect for a dinner for two.
Ingredients:
- 1/2 lb shrimp, peeled and deveined
- 1 bell pepper, thinly sliced
- 1 onion, thinly sliced
- 1 avocado, sliced
- 1 cup cooked rice
- 1/2 cup black beans, drained and rinsed
- 1 lime, cut into wedges
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
Put chili powder, cumin, paprika, salt, and pepper in a small bowl and mix them together
Warm up the olive oil in a big pan over medium-high heat
Slice the onion and bell pepper and add them to the pan
Cook for about 5 minutes, until the vegetables are soft
Move the vegetables to one side of the pan and add the shrimp to the other
Sprinkle the shrimp with the seasoning mix
Cook for about two to three minutes on each side, or until the shrimp turn pink and opaque
Split the cooked rice between two bowls
Put cooked shrimp, peppers and onions in a pan, black beans, and avocado slices on top of each bowl
Serve with lime wedges on the side and fresh cilantro on top
