Balsamic Grilled Vegetables
A flavorful medley of grilled vegetables drizzled with balsamic vinaigrette.
Ingredients:
- 2 zucchinis, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
Preheat grill to medium-high heat
In a large bowl, combine zucchinis, red and yellow bell peppers, red onion, and cherry tomatoes
In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and pepper
Pour the balsamic mixture over the vegetables and toss to coat evenly
Thread vegetables onto skewers or use a grill basket
Grill for 10-15 minutes, turning occasionally, until vegetables are tender and lightly charred
Garnish with fresh basil before serving
